The Best Brownie Mix from Scratch

Homemade mixes are my favorite {example: my recipe for the best homemade pancake mix and my homemade biscuit mix recipe} and I have been working on developing the perfect brownie mix for some time. I got more serious about recipe testing it after I finally found the texture I was looking for. Since then, I’ve made brownies every two days for the last couple of weeks making minor adjustments each time. Andy and I are a little picky about our brownies. And yes, we ate them all and only shared a few. #dontjudgeus #itsforthekids But in all seriousness, this really is the best brownie mix from scratch out there!


Why is it the best? I’ll tell you.

Most homemade brownie recipes are more cake like and dense than I prefer. I prefer brownies to be very different from cake, if I wanted cake than I would just bake a cake! I think the perfect brownies have a crust on top and a soft, chewy texture underneath. I don’t like them mega-chocolatey {is that a word?} but I do like them to pack a hearty chocolate punch.

This brownie mix from scratch does all of those things. It will knock your socks clean off, I promise! But we shouldn’t talk about food and socks at the same time, that’s a little gross.

Back to the brownies. This mix will make about 5-6 batches of brownies and I bake each batch in an 8×8 pan. If you wanted to make more and bake it in a 9×13 pan, you would simply double the recipe. I really want to test this out in those miniature cast iron skillets – how cute would that be? Not to mention delicious. Scoop some ice cream on top along with some chocolate fudge and caramel sauce…

Excuse me, I have some tiny cast iron skillets to purchase.  Ahem.

The Best Brownie Mix from Scratch

Yields 5-6 batches of brownies, 9 medium sized brownies per batch.

    For the Brownie Mix
  • 5 cups sugar
  • 1 2/3 cups cocoa
  • 1 1/2 cups flour
  • 1 1/4 teaspoons salt
  • 1 1/4 teaspoons baking powder
  • For the Brownies
  • 1 3/4 cups brownie mix
  • 1/2 cup oil
  • 2 eggs
  • 1 1/2 teaspoons vanilla


    For the Brownie Mix
  1. Pour sugar in a large bowl.
  2. Sift remaining ingredients into the sugar.
  3. Whisk until combined.
  4. Store in an airtight container
  5. To Make the Brownies
  6. Combine all ingredients.
  7. Mix very well, about 2 minutes.
  8. Pour into greased 8x8 pan.
  9. Bake at 350 degrees F for 20-25 minutes. A toothpick should come out clean.
