    It is no secret that we LOVE tacos in our house. Andy fries up the best tacos, and it's one of our family's favorite meals. One of the things I love about tacos is how much variety you can have with the filling. I love experimenting and coming up with different filling recipes, it keeps tacos interesting since we love them so much. This is my chicken taco filling - and it is truly magical and life-changing. I promise!

    Changing up taco fillings and coming up with flavors on your own is much simpler than you may think. Once you know the most common Mexican flavorings, mix and match based on the meat you're serving. The classic taco filling spice mix is based on the chili powder. This classic spice mix can be used with any type of meat, but since chili powder is a strong herb, it pairs especially well with strongly flavored meat like beef or lamb. Chicken has a more mild flavor than beef, so when making chicken taco filling, pairing it with just cumin and some oregano is appropriate since neither of those is super intense. Make sense? Pairing flavors in the kitchen will take practice, just like riding a bike. But once you get the hang of it - your world opens up to so many more possibilities with your food!

    Chicken Taco Filling

    Ingredients
     
     

    • 2 cups chicken (shredded)
    • 1 tablespoon canola oil
    • ½ medium onion (diced)
    • 1 clove garlic (minced)
    • 2-3 teaspoons cumin (adjust amount to preference)
    • 1 teaspoon oregano
    • ½ cup chicken stock

    Instructions
     

    • Heat oil until shimmering.
    • Add onion and cook until translucent and starting to brown.
    • Add garlic and cook until fragrant, about 30 seconds.
    • Add chicken.
    • Add seasonings and let bloom for about 2 minutes.
    • Add chicken stock and scrape up any bits stuck to bottom of the pan. Simmer until almost gone, about 7 minutes.
    • Use in your favorite taco shells or fry your own (see my Deep Fried Taco Shell Recipe).
