Slow Cooker White Chicken Chili
Longbourn Farm • Alli Kelley
Slow Cooker Creamy White Chicken Chili is so easy to make and the perfect family meal. Made completely from scratch, this white chicken chili is a must have!
16ouncescan white beans or great northern beans(1 can, drained)
⅔cupsour cream
Instructions
In a crock pot, combine chicken broth, garlic, onions, chilies, oregano, cumin, cayenne and salt and pepper.
Stir briefly to combine.
Nestle chicken breasts in liquid mixture.
Cook on low up to 8 hours, the chicken will be cooked through in as little as 3.
30 minutes before serving, shred chicken. Add in the beans and sour cream.
Serve with fresh cilantro, Monterey jack cheese, green onions, lime wedges and tortillas, if desired.
Notes
By adding the 4 oz of peppers and cayenne, the soup will have a moderate heat. For less heat, half the peppers and leave out the cayenne. Shredding the chicken and adding the beans and sour cream 30 minutes before serving allows them time to warm up and for the flavors to meld.If you are unsure if you will like the sour cream flavor, start by adding ½ of a cup and go from there until you reach a flavor you like. I like ⅔ cup, some people like even more than that. Don't be afraid to try out different ratios!
