Ingredients
  

  • 2 zucchini (sliced, medium size)
  • 1 cup cherry tomatoes (whole or sliced in half)
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Preheat the oven to 425ºF.
  • Toss together all the ingredients.
  • Spread on a sheet pan.
  • Roast for 15 minutes.
