Herb Butter Beans

If you’re looking for a way to jazz up a salad or switch up your side dishes, you have to try butter beans with herbs. My butter bean recipe is a mouth-watering flavor explosion, thanks to the addition of lemon and wonderful fragrant herbs. Trust me; your taste buds will thank you!

Ingredients
  

  • 2 tablespoons olive oil
  • 1 can butter beans (15 ounces, NOT drained)
  • ¼ teaspoon pepper
  • ½ teaspoon salt
  • ¼ teaspoon lemon zest
  • ½ teaspoon rosemary (dried or fresh)
  • 1 teaspoon parsley (dried or fresh)
  • 1 teaspoon basil (dried or fresh)

Instructions
 

  • Heat the olive oil in a medium skillet until shimmering.
  • Add the beans and half of the liquid in the can.
  • Add the salt and pepper. If you're using dried herbs, add them now.
  • Bring to a simmer.
  • Simmer for 5-8 minutes or until the butter beans are tender.
  • If you're using fresh herbs, add them to finish and stir to combine.
