Easy Stuffed Peppers Recipe

Easy stuffed peppers are a family favorite and packed with hearty Ground Beef and amazing flavor. They also make a great first food for growing little ones.

Equipment

Ingredients
  

  • 1 pound Ground Beef
  • 6 bell peppers (see note)
  • 1 ½ cups rice (cooked)
  • ⅓ cup breadcrumbs
  • 1 egg
  • 15 oz diced tomatoes
  • ⅓ cup onions (diced)
  • 2 tablespoons garlic (minced)
  • ½ teaspoon sage (ground)
  • ½ teaspoon thyme (leaves)
  • ¼ teaspoon oregano
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¾ cup cheddar cheese (shredded)

Instructions
 

  • Preheat oven to 350ºF.
  • In a large bowl, combine Ground Beef, cooked rice, onion, garlic, spices, tomatoes, breadcrumbs, and egg until well mixed.
  • Slice the tops off of the peppers, leaving as wide of an opening as possible. Clean out the insides.
  • Place peppers upright in a greased 9x13 pan.
  • Fill with Ground Beef mixture.
  • Cover with foil and bake for 50 minutes.
  • Uncover, top with cheese, and bake an additional 10 minutes, until a meat thermometer registers 165ºF.

Notes

You can use any kind of bell pepper you prefer. Choose peppers that are wide with a flat base. They will stand up better in the pan.
