Cassia cinnamon and Ceylon cinnamon are the two main types of cinnamon you can buy. Cassia is more common and comes in a few different varieties. Ceylon cinnamon is harder to find but has a more delicate flavor and is sometimes called ‘true’ cinnamon. Both types have different flavor profiles, so feel free to experiment and see which you prefer!
This cinnamon sugar recipe can last for a long time if stored properly. I like to keep mine in an airtight container or mason jar in a cool, dry place.
It's best to use it within 12 months before the spice loses its potency, but this cinnamon and sugar ratio can last way longer!
