You'll need enough oil for the apple fritters to float, I like to use a 6 quart dutch oven because they heat evenly. You'll most likely need 2-3 cups of oil.
Heat the oil to 350ºF. Use a candy thermometer or instant read thermometer to make sure it's the right temperature.
Sift together the flour, baking powder, salt, cinnamon, and cloves. Set aside.
Cream together the white and brown sugar and the butter.
Add the eggs and beat until light and fluffy, about 2 minutes.
Add the vanilla and sour cream, mix until combined.
Add half of the dry ingredient mixture and mix until just combined.
Add half of the apple cider and mix until just combined.
Add the rest of the dry ingredient mixture. Mix until just combined.
Add the rest of the apple cider. Mix until just combined.
Fold in the apples gently until evenly mixed through.
Drop rounded tablespoons of batter into the oil, turning periodically until the fritter is browned evenly. This will take about 6-8 minutes.
