Notes
Roast Size and Cooking Time: A 4-5 pound New York strip roast typically takes 45-60 minutes total cooking time, but always rely on a meat thermometer rather than time. Plan for about 15 minutes per pound after reducing the temperature to 375°F.Different cuts: If New York strip roast is unavailable or too expensive, try a top sirloin roast or a tri-tip roast. These cuts are leaner and slightly less tender but respond well to the same cooking method. Reduce cooking time slightly as they may cook faster.Adjusting Sauce Heat: Start with 2 tablespoons of horseradish for mild heat or increase to 4 tablespoons for a bolder kick. Make the sauce at least 30 minutes before serving so flavors can blend together.
