Flat Iron Steak Recipe

When I tried this Flat Iron Steak Recipe, I couldn't believe how such an affordable cut could rival expensive steakhouse favorites. The secret lies in a simple marinade and knowing exactly when to pull it from the heat.
Combine the marinade ingredients and add the flat iron steak.
2 tablespoons soy sauce, 3 tablespoons lemon juice, ⅔ cup olive oil, 1 tablespoon brown sugar, 1 garlic clove, ½ cup scallions, 1-2 pound flat iron steak
Let sit for 1 hour, up to overnight.
Remove the flat iron steak from the marinde.

Season with the salt, pepper, and paprika.

Add 2 tabelspoons of olive oil to a medium pan over medium heat.

Cook the flat iron steak for 5-6 minutes per side, until the internal tempeature reaches 135ºF.
Let rest 10 minutes. Slice against the grain and serve.
Notes
For a different flavor profile: Swap lemon juice for lime juice and add a teaspoon of cumin for a Mexican-inspired version. Or use balsamic vinegar instead of lemon for deeper, sweeter notes.Spice it up: Add red pepper flakes to the marinade or seasoning mix for heat. Or brush with chimichurri during the last minute of cooking.
