Corn Spinach Salad with Lime-Honey Dressing

This vibrant corn spinach salad brings together the best of summer's fresh produce in one delicious bowl. With sweet corn kernels, tender baby spinach, crisp cucumber, and juicy tomatoes all tossed in a zesty lime-honey dressing, this salad is both refreshing and satisfying!
3earsfresh sweet corn(cooked and cooled enough to handle)
1 ½cupsfresh baby spinach
¾cupchopped cucumber
½cupchopped tomato(1 medium)
Instructions
In a large bowl whisk together the lime juice and honey. Add the cilantro, jalapeño, and salt; whisk to combine.
Cut the corn from the cob and add it to the dressing. Stir in the spinach, cucumber, and tomato. Serve right away or cover and chill for up to an hour.
Notes
Choose the Right Corn: Select ears of corn with bright green husks and golden silk for the sweetest flavor. The kernels should feel plump when you press them gently. If corn isn't in season, high-quality frozen corn that's been thawed and drained works as a good substitute.Less Heat: You can omit the jalapeño entirely for a mild version, or substitute it with a small amount of finely diced bell pepper for crunch without heat. You could also use just a pinch of mild chili powder mixed into the dressing for subtle warmth.Serving Suggestions: This salad pairs beautifully with grilled chicken, fish, or steak. It's also excellent alongside Mexican-inspired dishes like tacos, quesadillas, or grilled shrimp!
