Whisk together the eggs and milk until evenly combined.
Melt butter in the nonstick skillet.
Pour eggs into the skillet.
Mix the eggs as they cook almost constantly. I like to use a rubber spatula and swirl it through the eggs to break them up and encourage even cooking.
When about 3/4 of the eggs are cooked and the rest are still liquid, add in the salt and pepper and any other mix-ins you like (cheese, bacon, chives, etc.).
Continue to mix until the eggs are almost done, but still slightly moist. Turn off the heat and let the eggs sit for a couple of minutes to cook completely through.
