For the Wraps

tortillas

of thinly sliced, choose your favorite

baby arugula
or spring greens, or a mix of both
For the Wrap Sauce
1 1/2

Mayonaise

cup
dijon mustard
or whole grain mustard

Instructions
For the Wrap Sauce
Combine all ingredients in a small bowl.
Taste and adjust seasonings to taste.
For the Wraps
Lay a tortilla flat.
Spread an even layer of sauce on the tortilla, leaving about 1 inch of space from the edge.
Place a layer of cheese on top of the sauce.
Place a layer of greens on top of the cheese.
Place a layer of ham on top of the greens.
Wrap tightly, tucking in any cheese, greens, or ham that get pushed out as you go.
Wrap tightly in plastic wrap and refrigerate for at least 30 minutes, up to overnight.
Just before serving, slice about 1 1/2 inch thick.
Notes
You can use whatever size tortillas you want, you will just have to adjust the filling measurements to account for the different size.
