In a pie plate, combine eggs, brown sugar, nutmeg, milk, vanilla and orange zest.
Mix well until the eggs are beaten.
Heat skillet on low and let it come to temperature.
Place pieces of bread in egg mixture, coating both sides.
If the bread is thick and stale, let it sit for up to 7 minutes per side, but don't let it get soggy. Soggy bread won't cook well.
