Tortellini soup is that easy, quick and filling dinner dish you wish you found earlier. Packed with fresh veggies, sausage and tortellini in every bite.
In a pot or dutch oven, heat olive oil over medium heat.
Add sausage and cook until almost browned.
Add herbs and onion and cook until translucent.
Add garlic and cook until fragrant, about 30 seconds.
Add carrots, celery, diced tomatoes, and broth.
Bring to a simmer and simmer for 15 minutes.
Add kale and tortellini, cook until tortellini is done - about 3 minutes.
Garnish with fresh parsley and parmesan cheese.
Notes
You can use ground sausage or kielbasa, either works well and tastes great. I usually use frozen tortellini, you can also use fresh but I do not recommend dried.
