russet potatoes

butter
melted

olive oil

dijon mustard

rosemary
freshly chopped, see note
Instructions
Preheat oven to 400ºF.
Wash potatoes thoroughly. Cut into wedges.
Combine the remaining ingredients and toss with potatoes to coat.
Place potatoes on a lined baking sheet, leaving plenty of room between them so they can roast. I usually use 2 baking sheets for 4 pounds of potatoes.
Bake potatoes until golden brown and fork-tender, about 45 minutes.
