Instructions
In a medium skillet, melt butter over medium heat.
Add onions and cook until soft and translucent.
Add garlic, salt, and cumin. Cook until fragrant, about 1 minute.
Add lime zest and rice and stir to coat evenly in butter and spices.
Add chicken broth and bring the mixture to a boil, reduce heat to simmer and cover.
Simmer covered for 15-20 minutes, or until the majority of the liquid is absorbed by the rice.
Add chopped cilantro and lime juice, gently fold into the rice to combine.
