Notes
If you are using individually wrapped caramels, be sure they are fresh! If they are stale or old the caramel will be extremely tough after it is melted.I prefer how almond bark melts and spreads compared to white chocolate. It is also hard for me to find white chocolate where I live but either will work, It’s your preference. Once the caramel and other toppings are melted, I keep them warm by placing the containers in a large baking dish filled with a couple inches of hot tap water. Keeping them in a warm water bath makes it easier to keep everything melted if decorating is taking a while. These caramel apple slices will last for a few hours for a party or a treat delivery, but keeping them overnight isn’t recommended. Since the apples are cut, the moisture from the inside of the fruit will evaporate and cause the caramel to slide.
Why won't the caramel stick to my apples?
The caramel is going to loosen on the apples as they sit because they will sweat. Ensuring that your apple slices are very dry before coating them in caramel is going to help.
Another option is to dip the apples in boiling water before slicing them. This will melt the natural wax on the peel and help the caramel stick.
If you're making homemade caramel, making it a stickier consistency will also help it stick to the apples.
If you dip the apples in the caramel, it won't stick. Leaving the caramel apple slices on the sheet tray will allow the caramel to adhere to the apple skin and stick better.
