Crispy roasted potatoes are the perfect easy side dish to any meal! Crispy and flavorful on the outside and creamy and soft inside. Heaven!!!

  • 2 pounds potatoes any kind works, I like yukon gold best, 1 inch diced
  • 1/4 cup olive oil
  • 2 teaspoons season salt
  • 1 teaspoon table salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika


  • Preheat oven to 450 degrees F.
  • Toss potatoes with olive oil and seasoning.
  • Spread potatoes in an even layer on a sheet tray that has been lined with parchment or foil.
  • Cover completely with foil.
  • Bake covered for 30 minutes.
  • Uncover and toss the potatoes.
  • Finish baking, uncovered, until soft, about 10 more minutes.
