- 1 pound bowtie pasta or whatever kind you like
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 chicken breasts boneless, skinless, cubed
- 4 garlic cloves minced
- 1 cup sun-dried tomatoes rough chopped
- 1/4 cup white wine chicken stock can be substituted
- 1 can chicken broth 14.5 ounce
- 1/2 cup cream
- 1/3 cup parmesan cheese
- salt and pepper to taste
- 2-3 tablespoons fresh basil minced
In a skillet, heat butter and oil until shimmering. Add chicken. Cook until browned and cooked through, remove from pan.
Add garlic and sun dried tomatoes and cook briefly, 30 seconds to 1 minute.
Add white wine and scrape bottom of pan while it reduces, this will happen quickly.
Once wine is reduced, add chicken broth. Simmer about 5 minutes, until tomatoes plump up and the broth is reduced by 1/4 and slightly thickened.
Add cream and parmesan cheese, simmer for about 3 minutes until thickened.
Add salt and pepper and basil, taste and adjust seasonings.
Add in pasta chicken, toss to combine.
