Skillet Sun-Dried Tomato Pasta with Chicken

Ingredients

  • 1 pound bowtie pasta or whatever kind you like
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 chicken breasts boneless, skinless, cubed
  • 4 garlic cloves minced
  • 1 cup sun-dried tomatoes rough chopped
  • 1/4 cup white wine chicken stock can be substituted
  • 1 can chicken broth 14.5 ounce
  • 1/2 cup cream
  • 1/3 cup parmesan cheese
  • salt and pepper to taste
  • 2-3 tablespoons fresh basil minced

Instructions

  • In a skillet, heat butter and oil until shimmering. Add chicken. Cook until browned and cooked through, remove from pan.
  • Add garlic and sun dried tomatoes and cook briefly, 30 seconds to 1 minute.
  • Add white wine and scrape bottom of pan while it reduces, this will happen quickly.
  • Once wine is reduced, add chicken broth. Simmer about 5 minutes, until tomatoes plump up and the broth is reduced by 1/4 and slightly thickened.
  • Add cream and parmesan cheese, simmer for about 3 minutes until thickened.
  • Add salt and pepper and basil, taste and adjust seasonings.
  • Add in pasta chicken, toss to combine.
  • Serve!
