In a large skillet, melt 1 tablespoons butter and sauté meat, onions, and veggies until slightly browned. Remove from pan and set aside.
Add 2 tablespoons of butter and add the potatoes, breaking them up as you get them in one even layer on the bottom of the pan. Season with salt and pepper. If dry, add a couple tablespoons of water and heat through with the lid of the pan on for 6-8 minutes. When done, remove from pan and set aside with veggies.
Beat the eggs lightly with cheese. Add the last tablespoon of butter to the pan and pour the eggs in. Season with salt and pepper.
Start scrambling the eggs, and when they are about halfway was done, add in the meat, onion, veggies, and potatoes and stir to combine.
Cook until eggs are done. Taste and adjust seasonings. Add fresh chives and rollin warmed tortillas.

My favorite veggies to add are peppers, zucchini, and green onion.
