In a large bowl, combine the flour, yeast, and salt.
You do not have to bloom the yeast in water, unless you are concerned it might not be good anymore.
Add the water and mix until a sticky dough forms.
Cover and let sit overnight, 8-12 hours.
Preheat the oven to 400ºF.
On a floured surface, turn out the dough. Form into a tight loaf by creasing lightly down the center of the dough and folding it in half, pinching the ends in.
Place on a lined or greased baking sheet.
Bake for 40-50 minutes or until the center of the loaf registers 195-205ºF.
