Instructions
For the Cookies
Preheat the oven to 350ºF.
Sift dry ingredients together, set aside.
In a large bowl, cream together shortening and sugar.
Add egg and vanilla, mix well.
Add yogurt, mix well.
Add dry ingredients and mix until just combined. The dough shouldn't be sticky to touch.
Line a sheet pan with parchment paper.
Spread the dough evenly over the sheet pan, it won't quite reach the edges. Trim the edges if desired.
Bake at 350ºF for 15-18 minutes.
When the cookies bars are done, they should be light and dry in color.
For the Icing
Whip together the powdered sugar and butter on low speed.
Add the vanilla extract, almond extract, cream, and food coloring (if desired).
The consistency should be light and loose.
Beat for 5-8 minutes until it's light and fluffy.
Once the cookie bars are cooled, spread the icing over the cookies.
Notes
Sour cream can be substituted for the plain yogurt. You can also use vanilla yogurt or Greek yogurt.
