Easy Egg Salad Recipe
Super easy egg salad recipe! Perfect in a sandwich, on crackers, or all by itself. Toss it together in less than 30 minutes for a quick meal.

Servings 6 people
- 12 hard boiled eggs chopped
- 3 tablespoons pickles minced, see note
- 1/2 cup celery minced, about 2 stalks
- 1/3 cup mayonnaise
- 1/2 cup purple onion minced, about 1/2 an onion
- 2 tablespoons water
- 1/2 teaspoon hot sauce see note
- 1 tablespoon dijon mustard
- 1/8 teaspoon season salt
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Gently combine all ingredients EXCEPT water.
Add the water a little bit at a time until the egg salad is creamy.
Taste and adjust seasonings.
You can use sweet or dill pickles, they both compliment the recipe well.
Add as much or as little hot sauce as you prefer, it adds a nice flavor and kick.
