These potatoes have changed my life. I'm only slightly kidding 😉 As someone who just thinks potatoes are okay...I am now going through a 5 lb. bag of potatoes each week because we have been making these anywhere from 1-3 times a week. They are SO GOOD, SO EASY, and just SO great. 6/5 stars fo' sure!

I was looking on your site for your other oven roasted potato wedge recipe that I love, but this one came up first in my "potato" search and I decided to go for it. Holy cow! These are amazing! They looked good in your pics, and I was intrigued by your description of soft inside and crispy outside, but seriously, they were the star of the meal tonight! My husband kept saying, "these are gooood" and I couldn't stop snitching just one more from the bowl. A keeper for sure! Next time I'm thinking I might try some smoked paprika for a little change. The possibilities are endless, I'd imagine. YUM!
