Hi Kathy! I'm so glad you loved the poppy seed dressing! Yes, you are correct, they do solidify in the fridge. You can actually keep the poppy seed and red wine vinaigrette at room temperature in the cupboard since there isn't anything perishable in them! I keep them at room temperature for about 2 weeks max. If you feel more comfortable keeping them in the fridge, they will thaw if you set them out about 30 minutes before you need them and shake periodically. I hope that helps!
