Making delicious vegetables is the easiest thing in the entire world. Roasting almost anyΒ vegetable will make it delicious and itΒ takes minimal effort.These oven roasted carrots are proof!!Β 

Oven roasted carrots are one of my favorites because they get slightly caramelized and crispy. I toss a little bit of brown sugar in with mine to encourage caramelization but that is totally optional.

I understand that not everyone thinks it’s ok to add things like sugar and bacon to veggies.

Just kidding, I don’t understand. Ha.

But really if you wanted to leave out the brown sugar, that would be totally fine! There are only three steps to making oven roasted carrots {or any oven roasted vegetable}.

  1. Wash & slice.
  2. Toss with olive oil, salt and pepper.
  3. Bake on a sheet pan until tender.

Let’s talk about peeling the carrots. I don’t, because I’m lazy. You can peel the carrots if it bugs you. but it really isn’t necessary.

Also, I always line my baking sheets because {again} I am lazy. I hate washing them! Lining them with parchment or foil will save you so much clean up time!Β Kirkland brand Parchment from Costco {or Amazon!} is my absolute favorite. I use it multiple times a week and have yet to finish a roll in less than a year. Seriously.

Ingredients

  • 1 pound carrots, washed
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon peper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon brown sugar (optional)
  • 1 teaspoon fresh thyme leaves (optional).

Instructions

  1. Preheat oven to 425 degrees F.
  2. Slice carrots about 1/2 inch thick and 3-4 inches long.
  3. Place on lined baking sheet (see note).
  4. Pour olive oil, spices, and brown sugar over the carrots.
  5. Toss to coat evenly and spread carrots into a single layer.
  6. Bake on the middle rack in a preheated oven for about 25 minutes, tossing halfway, or until the carrots are tender and slightly browned.
  7. Sprinkle with fresh thyme leaves.

Notes

Adding the brown sugar is optional, it aids in caramelization.
