Homemade Chocolate Cupcakes!

If you have been following along on here, you know that I love  holidays! Valentine’s Day is no exception! But rather than make the focus of Valentine’s Day about love between two people, I like to make the focus about loving those around me in general. And of course this means I show my love by making food. Ha! This year I am making these homemade chocolate cupcakes, and I am not joking when I say they are the best ever.

I have made a ton of different cake and cupcake recipes, and this one is always the crowd favorite! It is based off of my chocolate cake recipe, and both are dreamy. I love the light and fluffy texture of these cupcakes. And they stay super moist! Basically they are perfect.

Usually I am always making some sort of cake in the month of February. On my side of the family alone there are FIVE birthdays within 2-3 days of Valentine’s day. Talk about a crazy time!

In fact, the first time Andy met and hung out with my family for an extended period of time was at one of these crazy birthday celebrations. After he survived that ordeal, I knew he was a keeper.

Speaking of Andy, he is one of those February birthdays! And his birthday request is the same every year: Please just team up with ol’ Betty and make me a chocolate cake from the box with white icing from the plastic can.

HA! Some childhood favorites will never change for him, and that’s ok.

Homemade Chocolate Cupcakes!

I used a vanilla buttercream for these cupcakes, based off of I Am Baker’s Whipped Vanilla Buttercream recipe. It’s the best. She is the best. If you haven’t watched her FB live videos, you’re missing out on a whole lot of hilarity. Basically the only difference is the amount of powdered sugar and the almond extract. Which I didn’t use because I ran out. But don’t be like me, add it. It is probably life changing, usually almond extract works like that.

Best ever homemade chocolate cupcakes with whipped vanilla buttercream. Perfectly moist and fluffy, these cupcakes are a breeze to make and so delicious!

Best Ever Homemade Chocolate Cupcakes

Yields About 2 dozen cupcakes

Ingredients

    For the Cake
  • 3 cups flour
  • ½ cup cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 cups sugar
  • ¾ cups olive oil
  • 2 tablespoons vinegar
  • 2 teaspoons vanilla extract
  • 2 cups water
  • For the Icing
  • 1 cup (2 sticks) butter
  • 1 tablespoon vanilla
  • 6-7 cups powdered sugar
  • 2-3 tablespoons milk

Instructions

    For the Cake
  1. Mix dry ingredients together.
  2. Mix wet ingredients together.
  3. Create a well in the dry ingredients and pour the wet ingredients in, mix until just combined. Do not over mix.
  4. Line muffin tin with cupcake liners.
  5. Adjust oven rack to the middle position and bake at 350 degrees for about 12-15 minutes. A toothpick should come out with a few crumbs on it.
  6. For the Icing
  7. Whip butter and vanilla together for 2-3 minutes.
  8. Scrape down bowl.
  9. Add powdered sugar, 1 cup at a time, scraping the bowl periodically.
  10. Add milk, 1 tablespoon at a time, until icing is desired consistency.
  11. Whip on high speed for 3-5 minutes.
